Dang, it’s hot!!! This coming from a girl who grew up in Texas. The biggest difference is that I had an air conditioner growing up. Typically, the weather is so mild here in the Bay Area that there is no need for an AC, but it has been oppressively hot for several days now & yesterday I reached my boiling point (ha, get it?!?!). My boys were at a swim meet & I knew they would be hungry when they returned, but the thought of turning on the oven was out of the question…. nix on the grill too (can’t ask a hungry man to grill when he’s tired & hot!). Solution: salad with rotisserie chicken.
Asian Chicken Salad
- 3 ½ lbs Baby Bok Choy, chopped
- 2 Ramen Noodle packages, crunched into small pieces, discarding the flavor pack
- 4 Green Onions, diced (optional)
- ½ cup Sliced Almonds
- ¼ cup Sesame Seeds
- 1 Rotisserie Chicken, shredded
Dressing:
- ½ cup Butter, melted
- ½ cup Sugar
- ½ cup Canola Oil
- ¼ cup Cider Vinegar
- ¼ cup Soy Sauce
Combine dry ingredients in a large bowl. Combine wet ingredients well then toss everything together until evenly coated.
You can use this recipe as a main course or as a side & skip the chicken. This is a family favorite and I hope it becomes yours too! My mom gave me this recipe years ago while we still lived in Georgia so this dish has “staying” power.

How how was hot Amy? I would love to have some 80 degree weather. I can handle the heat – even when it gets into the low 90’s…higher though and I heat up finally. Grumpy says I am terribly cold blooded! I think I’m living in the wrong part of the country!

Haha – air conditioner, no need to have one by the coast in SoCal. Well, last year I said this is crazy, it is only about 14 days a year when you need it right? But on those days, oh you really need it. I have lived for years without it.
It is installed and keeping us happy. So now I call it the best $8000 I ever spent. $8000 over 20 years, that is $29 per hot day. This was my rationale.

Yum! This is going right into my recipe box. We had the old traditional air conditioning system going on the past few days. I open up all the doors and windows in my home and before you know it, there is a nice warm breeze running through the home.

Moooooom! – Great idea, but unless I can buy them steamed or the weather is cooler, I was not gonna turn on anything that created heat. Seriously, you would have insisted that we go to Nordstrom’s to cool off.

HoneyB – It was the mid-90’s for 3-4 days, peaked up to triple digits on Friday…. even you would have been hot! The good part is that it always cools down at night so there is relief at the end of the day (unlike Texas or other areas in the South). I just looked at the weather & this week is back to normal…. whew! Hey, maybe the sweltering heat is headed your way!
Lori Lynn – You lucky chicita! Yes, those 14 days do seem to stand out in the year. In the past (and in the future for that matter!), we have gone to the cabana to soak ourselves for 7 or 8 hours. This weekend we just didn’t have the time. I like your statistics of $29/day – that’s a good argument!
Jane – Ooooh, I wish we had one too! At least we don’t need it at night. BTW, you can get better boy choy at Mitsuwa & their noodles are better than Ramen (more flavor).
