Asian Chicken Salad

Dang, it’s hot!!! This coming from a girl who grew up in Texas. The biggest difference is that I had an air conditioner growing up. Typically, the weather is so mild here in the Bay Area that there is no need for an AC, but it has been oppressively hot for several days now & yesterday I reached my boiling point (ha, get it?!?!). My boys were at a swim meet & I knew they would be hungry when they returned, but the thought of turning on the oven was out of the question…. nix on the grill too (can’t ask a hungry man to grill when he’s tired & hot!). Solution: salad with rotisserie chicken.

Asian Chicken Salad

  • ž 3 ½ lbs Baby Bok Choy, chopped
  • ž 2 Ramen Noodle packages, crunched into small pieces, discarding the flavor pack
  • ž 4 Green Onions, diced (optional)
  • ž ½ cup Sliced Almonds
  • ž ¼ cup Sesame Seeds
  • ž 1 Rotisserie Chicken, shredded

Dressing:

  • ž ½ cup Butter, melted
  • ž ½ cup Sugar
  • ž ½ cup Canola Oil
  • ž ¼ cup Cider Vinegar
  • ž ¼ cup Soy Sauce

Combine dry ingredients in a large bowl. Combine wet ingredients well then toss everything together until evenly coated.

You can use this recipe as a main course or as a side & skip the chicken. This is a family favorite and I hope it becomes yours too!  My mom gave me this recipe years ago while we still lived in Georgia so this dish has “staying” power.

  1. What a great idea for a super quick and easy dinner…you could also steam some snow peas and throw in as well! I’m on my way to the store now.

  2. Amy this dish look sooo delicious, I love this type of dish!!! xGloria

  3. How how was hot Amy? I would love to have some 80 degree weather. I can handle the heat – even when it gets into the low 90’s…higher though and I heat up finally. Grumpy says I am terribly cold blooded! I think I’m living in the wrong part of the country!

  4. Haha – air conditioner, no need to have one by the coast in SoCal. Well, last year I said this is crazy, it is only about 14 days a year when you need it right? But on those days, oh you really need it. I have lived for years without it.

It is installed and keeping us happy. So now I call it the best $8000 I ever spent. $8000 over 20 years, that is $29 per hot day. This was my rationale.

Nice salad! Good idea on Rotisserie Chicken.

  5. Yum! This is going right into my recipe box. We had the old traditional air conditioning system going on the past few days. I open up all the doors and windows in my home and before you know it, there is a nice warm breeze running through the home.

  6. oooo. cider vinegar sounds like a nice touch

  7. Moooooom! – Great idea, but unless I can buy them steamed or the weather is cooler, I was not gonna turn on anything that created heat. Seriously, you would have insisted that we go to Nordstrom’s to cool off.

Gloria – thank you, dear! I’m so glad to hear it!

HoneyB – It was the mid-90’s for 3-4 days, peaked up to triple digits on Friday…. even you would have been hot! The good part is that it always cools down at night so there is relief at the end of the day (unlike Texas or other areas in the South). I just looked at the weather & this week is back to normal…. whew! Hey, maybe the sweltering heat is headed your way!

Lori Lynn – You lucky chicita! Yes, those 14 days do seem to stand out in the year. In the past (and in the future for that matter!), we have gone to the cabana to soak ourselves for 7 or 8 hours. This weekend we just didn’t have the time. I like your statistics of $29/day – that’s a good argument!

Jane – Ooooh, I wish we had one too! At least we don’t need it at night. BTW, you can get better boy choy at Mitsuwa & their noodles are better than Ramen (more flavor).

Diva – Daahling, thank you! It’s crazy, but I have several different types of vinegars. One for every mood I guess.

    xoxox Amy

  8. Yum – such a perfect summer meal – tfs!!!

  9. Amy, great use of rotisserie chicken!! Everything about this dish screams delicious.
ps. feel free to send some heat over to Ithaca, NY… I’m freezing over here 😦

  10. It was hot until today here in Long Beach, too. Way too hot for May. It’s cool now and we are happier:) Love your salad recipe. Vinegar dressing is my fav.!

  11. Carolina – hope you have a chance to try it.

Antonio – Welcome & I’m glad you like it. I’m happy to send the heat to Ithaca next time it rolls around. The weather is back to normal (whew!). So, in August when you have a crazy heat wave you will know that it’s b/c I’m chanting “Ithaca” & dancing in my backyard.

Farida – Thank you, daahling! Your Zesty Fiesta Chocolate Fridge Cake is the perfect way to cool off…. this will be remembered next time.

  12. How are you Amy?? xxGloria

  13. This sounds yummy…I think we will try it tonight.
Todd was wanting something light for supper, and this sounds very simple for me too!! I love that I can come to your blog to look for something new to cook since you have so many ideas. Thanks.

    Love, Ashley

  14. Gloria – Hola, dear! I’ve been crazy trying to get things wrapped up for summer. Are your kids out of school yet?

Ashley – Oh yay! This is SOOO easy. I know you & Todd will like it. Ella can certainly eat the chicken…. wait. Is she old enough yet? I forget how old you have to be for solid food. Kisses to all, cuz.

  15. Mine are in school Amy, because you know we are in Autum/Winter, but for July they have winter’s vacations! They only they wanted!!! Sometimes I forget you are in summer when we are in winter, feel so close with many of you.xxGloria

  16. No, Ella isn’t old enough yet for chicken. We are just now introducing solids, and she is just eating the easy to mush foods. I’ll let you how the salad goes. Ashley

  17. It was 106 in the Napa area this past week, and this nice light meal would have hit the spot! Perfect, I can see why this is a family favorite!

  18. Gloria – Oh! I totally forgot about that! Well, at least you have a oliday in July to look forward to.

Ashley – I hope the salad went well. I need to come visit so that I can pinch Ella’s cheeks myself. She’s too cute!!!

Marie – 106!?!?! That is crazy! I hope you found a nice shady veranda to sip your wine.
