I am SOOO darn proud of myself for completing this challenge!!! I came home yesterday from spending EIGHT hours in the sun at a swim meet & then spent the next 3 hours whipping these eclairs together. They’re not as pretty as I would like them to be, but I did learn a lot and I enjoyed every bit of making them (except the clean-up!). We’re having company for dinner tonight & this was the perfect opportunity to try something new. I can’t wait for the final verdict. My family loved them – that’s what counts most!
LESSONS LEARNED: 1) Less is more – I thought if I squeezed out big “fingers” of dough that I would have big eclairs…. No. They just didn’t cook all the way through. 2) Do strain the mixture after tempering yolks the for the pastry cream even if you do not see any scrambled bits – they really only show up after you add the chocolate & by then it’s too late. 3) Break this recipe up over a couple of days – it would be easy enough to do if you have the foresight to think of it.

I liked your “lessons learned”…good to keep on file. One would wish that a huge finger of dough would just miraculously make a massive and gorgeous eclair…but alas, that is not how it works! Sounds like the family loved em though, and isn’t that what matters?

Looks great to me! I’m with you on the egg straining step – one part of me thought it was not necessary, but I did it anyway, only to find bits of egg that I strained out BY FOLLOWING THE DIRECTIONS. Ha!

Welcome back Amy! I can honestly say with every D-Baker challenge, I have learned the good, the bad, and the ugly! This one included.
After every challenge my kitchen would be condemed by Gordon Ramsey if he saw it. My Hubby walked in and just shook his head in disbelief! Baking is not one of my stronger points!
But he loved then as well as your family, and that’s all that counts!

Good tips. Giz and I had considered making the eclairs after a day of family events and a weekend of cooking/baking, but decided against it. From the sounds of your experience, we probably made the right decision.
