I’m a bit late in posting this, but I thought “What the heck!” This Shepherd’s Pie was too darn good NOT to be shared. Since I lack originally in preparing Irish dishes & can really only think of one, I searched all over for the perfect recipe for Shepherd’s Pie. I found the recipe on a great foodie blog, Italian Foodies. Although the main focus is Italian food, the author is Irish, living in Limerick. Lorraine’s blog is an excellent source of inspiration & her photographs are beautiful (please take a look at her Shepherd’s pie to see what the real deal looks like).
The recipe is easy to follow and I don’t think I made any changes besides adding peas. For the mashed potato topping, I cut a corner from a zip-lock bag & piped it atop the meaty part. I was going for that “fancy” look. Everyone enjoyed the meal & Alfredo said that I should add this to my regular line-up of dinners. Thank you, Lorraine, for sharing!!!

Lorraine, the mashed potatoes were wonderful!!! I’d never put parmesan in them before. What a delightful difference that made!
Marie, yes, the family LOVED it & there was not one bite left on anyone’s plate. We all went to bed well-fed. Now that Easter is here, I need to see what you are cooking…. hint, hint.
